Chocolate Tart



Ingredients for the crust:

  • 1 ½ cups of all-purpose flour + extra for dusting
  • 2 tablespoons of powdered sugar
  • 1 teaspoon of sea salt
  • ½ cup of unsalted butter, cubed and very cold
  • 1 egg yolk
     

Ingredients for the filling:: 

  • 1 cup of heavy cream
  • 2 cups of 60% dark chocolate
  • Sea salt to tastee
     

Instructions 
For the crust: 

Preheat the oven to 180ºC (350ºF).. 
In a bowl, combine the flour, powdered sugar, and salt. Add the butter and mix with your hands until the mixture resembles coarse crumbs. Work quickly to prevent the butter from melting. Add the egg yolk and knead until the dough is smooth. Refrigerate for 30 minutes. 
Lightly dust a surface with flour and roll out the dough. Transfer it to a tart pan of your choice and prick the base with a fork to create small holes for ventilation. 
Cover with parchment paper and add pie weights (such as 1 pound of dried beans or chickpeas). Bake for 15 minutes to blind-bake the crust and prevent it from losing its shape. Remove the weights and parchment paper, then bake for another 10 minutes until golden brown. 

For the filling:

Heat the heavy cream in a saucepan and pour it over the chocolate in a bowl. Whisk until fully combined. Let the mixture cool for 5 minutes, then pour it into the tart crust. 
Sprinkle sea salt over the chocolate filling and refrigerate for 20 minutes before slicing and serving.
